Today, we're excited to introduce one of our favorite whole food diet recipes - this mouthwatering Tamale Pie is a fusion of hearty ingredients and natural goodness that will redefine your perception of healthy eating.
Ingredients:
3 cups dried pinto, black, or kidney beans
8 - 10 cups distilled water
3 garlic cloves
1 1/2 teaspoon ground cumin
2 medium onions
2 bell peppers
2 cups corn kernels
1/8 teaspoon cayenne pepper (optional)
1 teaspoon of Celtic Sea Salt
3 1/2 cups chopped tomato
Directions:
1. Sort and wash beans thoroughly, soak overnight.2. Drain and discard water.
3. Place beans in a kettle with distilled water, crushed garlic and cumin. Cook until tender, about 2 1/2 hours. Dice onions and bell peppers.
4. When beans are tender, steam or saute onion and bell pepper until the onion is translucent.
5. Add cooked beans, chopped tomatoes, corn, Celtic Sea Salt, and cayenne.
6. Simmer 30 to 45 minutes.
7. Pour into 9" x 12" baking dish, and set aside. Serve with corn bread if desired.
