Ingredients (for salad):
3 cups carrots (grated)
1 Red Delicious apple (grated)
1 celery stalk
1/2 cup raisins (organic)
Ingredients (for dressing):
1 Red Delicious apple (peeled and cored)
2 carrots (grated)
1/2 cup almonds (raw)
Apple juice
Directions:
- Peel and grate apple and carrot, and finely chop celery.
- Combine all ingredients above in a bowl and toss.
- Place ingredients for salad dressing in blender and blend until creamy.
- Add apple juice to desired consistency.
- Toss salad with dressing, and add raisins to salad just before serving.
