No zucchini in your wrap? That's against the "slaw!" OK, that was a weak one, but here are some fun zucchini facts that you can use to amaze your friends while you munch on this delicious, hand-held slaw wrap! Did you know that zucchini has more potassium than a banana? It's true! Or that the most flavorful zucchinis are the smallest ones in the bunch? On the flipside, the largest zucchini ever grown was almost 6 feet long and weighed close to 65 pounds!

Ingredients

2 extra large wraps/tortillas
1 cup shredded carrot
1 cup shredded zucchini
1 Tbsp apple cider vinegar
Sea salt and pepper to taste
4 Tbsp prepared hummus
garnish: pumpkin seeds

Directions

1. Combine carrot, zucchini, apple cider vinegar, salt, and pepper in a bowl and toss well to make a slaw.
2. Spread your hummus over the tortilla wraps.
3. Place a handful of slaw on top of the hummus.
4. Grind some fresh pepper over top and add a few pumpkin seeds.
5. Roll up the wraps and slice to serve.
Whole-food meal with leafy greens, beans, grains, berries, avocado, seeds, and vegetables being prepared in a sunlit kitchen.
