Ingredients
- 4 cups distilled water, heated to 107 degrees or less
- 1 medium carrot, cut in 1" rounds
- 1 stalk of celery (with leaves), cut in 1" pieces
- 2 chopped green scallions or some chopped sweet onion
- 2 cups fresh or frozen cherry tomatoes*
- Herb seasoning to taste
- Celtic Sea Salt or sea vegetables (dulse, kelp, etc.) to taste
Method
- Place all ingredients in Vita Mix or other blender and blend until creamy. Enjoy!
- Alternatively, chop up your choice of fresh vegetables until fine, place in each serving bowl, and fill with soup for a crunchy, delightful warm soup.
- Serve with whole grain crackers.
- Another option is to start with cold distilled water and chill for a cold soup during warm weather.
*In the summer, when cherry tomatoes are almost falling off the vine, we pick bags of cherry tomatoes, freeze them, and use them all winter long for dressings, soups, etc.
