1 medium carrot, cut in 1" rounds
1 stalk of celery (with leaves), cut in 1" pieces
2 chopped green scallions or some chopped sweet onion
2 cups fresh or frozen cherry tomatoes*
Herb seasoning to taste
Celtic Sea Salt or sea vegetables (dulse, kelp, etc.) to taste
2. Chop some fresh vegetables till fine (your choice), place in each serving bowl, and fill with soup for a crunchy, delightful warm soup.
3. Serve with whole grain crackers.
4. Another option is to start with cold distilled water and chill for a cold soup during warm weather.
