Ingredients:
4 cups distilled water, heated to 107 degrees or less
1 medium carrot, cut in 1" rounds
1 stalk of celery (with leaves), cut in 1" pieces
2 chopped green scallions or some chopped sweet onion
2 cups fresh or frozen cherry tomatoes*
Herb seasoning to taste
Celtic Sea Salt or sea vegetables (dulse, kelp, etc.) to taste

 

Directions:
1. Place all ingredients in Vita Mix or other blender and blend until creamy. Enjoy!
2. Alternatively, chop up your choice of fresh vegetables until fine, place in each serving bowl, and fill with soup for a crunchy, delightful warm soup.
3. Serve with whole grain crackers.
4. Another option is to start with cold distilled water and chill for a cold soup during warm weather.

 

*In the summer, when cherry tomatoes are almost falling off the vine, we pick bags of cherry tomatoes, freeze them, and use them all winter long for dressings, soups, etc.
