2 large cucumbers (chopped into 1/2 inch cubes)
1 small sweet onion (quartered and sliced into thin strips)
1/2 teaspoon Celtic Sea Salt (optional and to taste)
Juice from small lemon
1-2 cloves garlic (finely diced)
1 Avocado (chopped into 1/2 inch cubes)
Optional – 1/4 cup diced red bell pepper OR 1/2 diced fresh red chili pepper
Toss, serve, and ENJOY!
