I don't know about the 'living is easy' part, but summertime is a wonderful time to enjoy the abundance of fresh raw fruit and vegetable recipes available for salads. This week's recipe was sent in by Metaxia, who wrote: "As soon as I started The Hallelujah Diet, which was about 3-years ago, I started making a 'Greek Raw Vegan Salad' that I have been eating for lunch ever since! I just can't get enough of it. To make it, all you need is:
Ingredients
- 1-2 Tomatoes (especially yummy when right out of the garden)
- 1/2 a Cucumber
- Extra Virgin Olive Oil
- Celtic Sea Salt (to taste)
- Oregano (fresh is best, but dried if fresh not available)
- (Feel free to add red and green peppers, sweet onion and olives)
Method
- Cut up the tomatoes and cucumber. Put them in a salad bowl and sprinkle on the oregano and salt. Add olive oil and that's it - a Greek Salad. I take it to work every day for my lunch. Hope you enjoy this recipe." ENJOY!
