I don't know about the 'living is easy' part, but summertime is a wonderful time to enjoy the abundance of fresh vegetables available for salads. This week's recipe was sent in by Metaxia, who wrote: "As soon as I started The Hallelujah Diet, which was about 3-years ago, I started making a 'Greek Salad' that I have been eating for lunch ever since! I just can't get enough of it. To make it, all you need is:
Ingredients
1/2 a Cucumber
Extra Virgin Olive Oil
Celtic Sea Salt (to taste)
Oregano (fresh is best, but dried if fresh not available)
Directions
2. Put them in a salad bowl and sprinkle on the oregano and salt.
3. Add olive oil and that's it - a Greek Salad.
