(EDITORS NOTE: This recipe for 'Raw Sweet Potato Salad' generated considerable response from our readers because it contained the ingredient 'MACE.' Here is a sampling of the responses: "In the recent recipe for Sweet Potato Salad, the last ingredient 'Sprinkle with mace.' What is "Mace? I know whoever I give this recipe to, will ask about that, and I haven't a clue . . . "
MACE -- The dictionary offers three definitions: (1) "a clublike armor-breaking weapon . . . (2) "a spice made from the inner husk of the nutmeg. (3) "a chemical spray that causes severe eye and skin irritation . . . " I believe Louis intended number (2) when she sent in the recipe. So I went to Rhonda's Spice Rack and pulled out the spice bottle labeled 'MACE.' It offered the following information:
"Mace and Nutmeg are the only spices that come from the same fruit. Mace is the lacy covering of the seed from Indonesia. It is orange in color, and has a sweet, warm, spicy flavor. May be interchanged with Nutmeg . . . "
