Salad with Apple, Pecans, and Greens (Serves 2)
From our recipe book, Rhonda's Culinary Creations by Rhonda Malkmus, we have a simple, healthy salad that works well year-round. This is a basic meal option that works well as a light lunch or in a smaller portion as a side with dinner.
We always use fresh ingredients, and this recipe makes it easy to do any substitutions with whatever you have on hand! Any salad greens will work for the base. Golden Delicious apples are my go-to, but you could use Granny Smith for a crisp bite with more of a citrus-y tart flavor if you prefer. Chopped pecans pair well with apples, but you could also use walnuts or even almonds if you're running low on nut choices.
You also have the option of adding something seasonal in, which makes this easy salad a great recipe for any time of year. A small handful of raisins adds a touch of sweet, chewy goodness! When the weather starts to turn and temperatures start to drop, you may find your recipes start to transition as well. This time of year it might be easier to change up this meal staple by adding some dried cranberries instead. Go with whatever you have on hand and this salad is sure to stay in rotation all year long!
