Basil Tomato Salad

Here's a favorite salad that Rhonda and George Malkmus enjoy at home. With a few fresh ingredients this combination of flavors really complements itself!

Fresh Ingredients

Get to know your tomatoes for a variation with different organic options. Although yellow tomatoes are a bit sweeter, they also have lower amounts of vitamin C and a bit higher in sodium than red tomatoes. They each have different balances of sugars and acids, so decide which is healthier in your recipe for your health needs.

Ingredients

3-4 medium vine ripened tomatoes (cut into ½ inch pieces)
2 garlic cloves (peeled and minced)
1/2 cup fresh basil leaves (minced fine)
2 Tbsp extra virgin olive oil
1/2 tsp unrefined sea salt (optional and to taste)

Directions

1. Place all prepared ingredients in a bowl and mix well.
2. Allow to marinate for at least a half hour in the refrigerator.
3. Serve with whole grain bread, or with pasta, as a side dish, or even as a condiment.
4. ENJOY!
