Faye's Raw Pumpkin Salad

Aunt Elisa’s Favorite Salad Dressing Reading Faye's Raw Pumpkin Salad 1 minute Next Colonial Bread

I found this recipe and adapted it to fit our way of eating. This is a good Fall Salad, and we really enjoy it.


1/2 cup Vegenaise (a healthy mayonnaise available at Health Food Stores)
1 tablespoon Lemon Juice
12 ounces of raw Pumpkin flesh (finely diced)
2 Apples (cored and diced)
4 Celery stalks (sliced thinly)
1/4 cup Walnuts or nuts of your choice (chopped)
1/2 cups raisins (soaked in distilled water)
1 to 2 tablespoons of juice from soaked raisins


1. Place Veganaise, lemon juice, and juice from soaked raisins in a mixing bowl and whisk until smooth.
2. Stir in the other ingredients and mix well.
3. Cover and chill in the refrigerator for at least 30 minutes.
4. We serve this over a bed of greens*, and this is our meal!
5. *Optional: Sprinkle with Cinnamon, Nutmeg and/or Cardamom before serving
