Ingredients
1/2 cup Veganaise (a healthy mayonnaise available at Health Food Stores)
1 tablespoon Lemon Juice
12 ounces of raw Pumpkin flesh (finely diced)
2 Apples (cored and diced)
4 Celery stalks (sliced thinly)
1/4 cup Walnuts or nuts of your choice (chopped)
1/2 cups raisins (soaked in distilled water)
1 to 2 tablespoons of juice from soaked raisins
Optional: Sprinkle with Cinnamon, Nutmeg and/or Cardamom before serving
Directions
Place Veganaise, lemon juice, and juice from soaked raisins in a mixing bowl and whisk until smooth. Stir in the other ingredients and mix well. Cover and chill in the refrigerator for at least 30-minutes. We serve this over a bed of greens, and this is our meal. Hope you enjoy this as much as we do!" ENJOY!
