Lunch or even dinner - this hearty sandwich is big enough for both!

Ingredients

2 slices of whole grain bread (toasted lightly if desired)
grapeseed oil Vegenaise (available in most health food stores)
organic mustard (available in most health food stores)
several leaves of Romaine lettuce
red bell pepper, sliced thin
sweet onion, sliced thin
tomato, sliced thin
cucumber, sliced thin

Directions

1. After toasting the bread, spread with Vegenaise and mustard, and then pile up all the vegetables you have or want
2. ENJOY!
