Ingredients:
1 pound dry Lima Beans (soak overnight, then discard soak water)
3-4 medium to large Sweet Potatoes (pealed and diced)
1 onion (chopped)
1 tablespoon Extra Virgin Olive Oil (for sautéing onion) 1-2 Apples (optional)
Season with Celtic Sea Salt or Herbs to taste.
Directions:
Sauté onion and then put all ingredients in a large slow cooker for about 4 hours on high, or longer on low (check for doneness). Or, can be placed in layers in a large oven dish with lid and baked at 350 for an hour or more, but make sure enough water is kept in oven dish to prevent burning (check for doneness).
