Ingredients:
1-tablespoon Extra Virgin Olive Oil
4 cups Sweet Potato (peeled and cut in 1/2 inch cubes)
1 cup Red Bell Pepper (chopped)
1 cup Onions (chopped)
1 teaspoon Garlic (minced)
1 teaspoon dried Rosemary (or 1 1/2 T fresh)
1 teaspoon dried Thyme (or 1 1/2 T fresh)
1 - 15 ounce can Red Kinney Beans
1 - 15 ounce can small red beans
1/2 teaspoon Celtic Sea Salt
Cayenne pepper (optional)
Directions:
Heat the Extra Virgin Olive Oil in a large skillet, and add sweet potatoes, bell pepper, onion, garlic and herbs. Cook covered over medium heat until vegetables are tender - 5 - 8 minutes, stirring occasionally. Mash beans coarsely and stir into vegetable mixture until heated through (another 3 - 4 minutes.) Stir in salt and pepper. ENJOY!
