1 Tbsp extra virgin olive oil
4 cups sweet potato (peeled and cut in 1/2 inch cubes)
1 cup red bell pepper (chopped)
1 cup onions (chopped)
1 tsp garlic (minced)
1 tsp dried rosemary (or 1 1/2 Tbsp fresh)
1 tsp dried Thyme (or 1 1/2 Tbsp fresh)
1 - 15 oz can red kidney beans
1 - 15 oz can small red beans
1/2 tsp Celtic sea salt
cayenne pepper (optional)


1. Heat the extra virgin olive oil in a large skillet, and add sweet potatoes, bell pepper, onion, garlic and herbs.
2. Cook covered over medium heat until vegetables are tender (5-8 minutes), stirring occasionally.
3. Mash beans coarsely and stir into vegetable mixture until heated through (another 3-4 minutes).
4. Stir in salt and pepper.
