It is one of those raw vegan salads that you wonder how something can be so healthy and taste so good. Make plenty, as this is always a big hit! Pair it with a vegna entree for a full vegan meal. Leftovers seem to be even better."
CARROT/RAISIN SALAD
Ingredients:
4 cups shredded organic carrots
1 1/2 cups organic raisins
1 drained 16 oz can crushed pineapple in its own juice
1 cup healthy mayonnaise
Directions:
Add all ingredients and stir until well blended. Chill and serve. ENJOY!
