BLACK BEAN SALAD
Ingredients
6 cups Romaine Lettuce (torn into pieces)
1 can (15oz) Organic Black Beans (rinsed and drained)
1 cup Tomatoes (seeded and chopped)
1 cup Green (or red) Peppers (chopped)
1/2 cup Sweet Red Onion (sliced)
LIME VINAIGRETTE DRESSING
1/4 cup Cilantro (fresh & minced)
1/4 cup Tomatoes (seeded and chopped)
1 tablespoon Organic Apple Cider Vinegar
1 tablespoon Extra Virgin Olive Oil
1 tablespoon Lime Juice
1/2 teaspoon Lime Peel (grated)
1 Garlic Clove (minced)
1/4 teaspoon Celtic Sea Salt
1/4 teaspoon Chili Powder (or to taste)
Directions
Combine the lettuce, beans, tomatoes, pepper and onion in a large serving bowl. Combine the Vinaigrette ingredients in a blender or food processor until smooth. Pour dressing over salad and toss to coat. ENJOY!
