This sweet, crunchy salad is a refreshing change from standard greens.
1/4 cup diced red pepper
1/4 cup diced cucumber
2 Tbsp broken walnut pieces
2 Tbsp chopped Italian parsley
3 Tbsp fresh lemon juice
2 Tbsp distilled water
2 tsp agave nectar OR 1/8 tsp stevia (to taste)
2. Combine dressing ingredients and thoroughly stir into vegetables.
3. Serve immediately or place in refrigerator till serving time.
