Ingredients
1 1/2 cups finely shredded green cabbage
1/4 cup diced red pepper
1/4 cup diced cucumber
2 tablespoons broken walnut pieces
2 tablespoons chopped Italian parsley
Dressing:
3 tablespoons fresh lemon juice
2 tablespoons distilled water
2 teaspoons (Agave Nectar) OR 1/8 teaspoon Stevia (to taste)
Directions
Prepare salad vegetables and set aside. Combine dressing ingredients and thoroughly stir into vegetables. Serve immediately or place in refrigerator till serving time. Perfect for a summer vegan dinner, or even a romantic vegan dinner! ENJOY!
