Almond/Pecan Milk

Almond and pecans provide a sustaining balance of fat, protein, and carbohydrates. Homemade nut milks are refreshing, creamy, and filling. When they are ice cold out of the refrigerator, they make a smart substitute for conventional ice cream sweetened with refined sugar.

Ingredients

½ cup almonds and ½ cup pecans, soaked overnight in refrigerator, soak water drained
3 ¾ cups water
2 dates, pitted
¼ tsp. unrefined salt

Directions

1. Blend nuts and water in a VitaMix.
2. Strain through a nut milk bag.
3. Pour milk back into the blender.
4. Add dates and salt and blend.
5. Store in glass canning jars.
