Had enough of winter? Treat your family to a fresh and fruity taste of spring! Loaded with creamy, zesty flavor, Rhonda's recipe for key-lime pie is a welcome treat any time of year. Unlike its standard American cousin, this key-lime pie uses avocados as a base instead of milk and eggs. Avocados have a wonderfully satisfying flavor and texture thanks to their creamy, healthy fats. The fats in an avocado help your body absorb fat soluble vitamins (A, D, E, and K). Avocados are good for your heart, too! Surprised? Oleic acid, the primary fat in avocados, is known to support heart heath, as are omega-3 fatty acids, which occur in avocados as alpha-linolenic acid. Avocados also have significant amounts of vitamin B6 and folate (B9) which are important for healthy regulation of homocysteine levels, another heart health benefit!

Ingredients

4 avocados, pitted and peeled
1/2 cup fresh lime juice
3/4 cup raw unfiltered honey or other sweetener
3/4 cup raw, extra virgin, cold pressed coconut butter
1 cup pine nuts, soaked 6 hours and drained
1 Tbsp lime zest
Pinch of unrefined sea salt

Directions

To make the filling
1. Add all the ingredients in a Vitamix or other powerful blender and blend until creamy.
2. Avocado will turn brown quicker if you over blend so be sure to blend just enough till smooth.

To serve
1. Top each slice with a little shredded coconut and thin slices of lime.
Whole-food meal with leafy greens, beans, grains, berries, avocado, seeds, and vegetables being prepared in a sunlit kitchen.
