Rhonda's Vegetable Pate

From Hallelujah Holiday Recipes from God’s Garden by Rhonda J. Malkmus and Friends, this delicious snack will be great to share with others during the holidays or just any time that you want to scrumptious little snack.


1 small head cauliflower, cut into large pieces
1 small red or yellow bell pepper, seeded and quartered
1 small yellow squash, sliced in large circles
1 small zucchini squash, sliced in large circles
1 cup sunflower seeds, soaked and drained
¼ - ½ red onion, chopped fine
¼ - ½ cup parsley leaves with stems removed
1 cup mixed vegetables (may use dehydrated)
½ tsp. garlic, peeled and minced
¼ cup green onions or shallots, chopped
1/3 cup ground flaxseeds*
2 -3 tsp. flaxseed oil
¾ tsp. ground cumin
½ tsp curry powder
½ tsp. ground coriander
Pinch of Celtic Sea Salt (optional)


1. Replace screen with the blank in Champion or Green Star Juicer
2. Place a large bowl underneath
3. Process cauliflower, red bell pepper, squash, sunflower seeds, red onion, and parsley through the machine
4. Run the mixture through a second time
5. Stir in mixed vegetables, minced garlic, green onion, ground flaxseeds, oil and seasonings
6. Mix well
7. Refrigerate pate for at least one hour
8. Stir the mixture, taste and adjust for seasoning
9. Cover and keep refrigerated
10. *Rhonda"™s Kitchen Tips: To grind flax seeds, place them in a clean electric coffee grinder and grind until consistency is reached.
