Refreshing Raw Cauliflower Soup

Cruciferous vegetables offer great benefits. They provide vitamins, minerals, antioxidants and are rich in sulfur compounds shown to help with collagen formation, protein production and anticancer activity. Also called the cabbage family, they possess a very distinctive smell and taste. Combining cruciferous cauliflower with citrus and other fresh flavors makes a cheery dish. Why not keep a jar full in your frig for an ultra-healthy snack or lunch item!

Ingredients

3 cups cauliflower, in chunks
Juice from 1 tangerine (2 Tbsp.)
2 Tbsp. flax oil
1 or 2 Tbsp. lemon juice, depending on tartness desired
1/8 tsp unrefined salt
1 ½ cups purified water
¼ cup raw cashews
½ Tbsp. raw onion
½ cup chopped red bell pepper, stem and seeds removed

Directions

Place all items in a food processor. Process until cauliflower is pulverized into tiny pieces.

Tastes great immediately, and maybe even better chilled overnight in the refrigerator allowing flavors to mingle.
