This high raw vegan recipe comes from Health Minister Mary Jaqua who lives in the state of Maine. Mary writes: "Thank you for all the wonderful raw food recipes you're including in the weekly Healthy Tips. Here is a recipe that I invented myself and enjoy particularly during the garden season. Hope it will be a special blessing."
Ingredients:
1 - very large ripe tomato (sliced 3/4" to 1" thick)
1 - zucchini (finely grated)
1 - summer squash (finely grated)
1 - sweet onion (sliced thinly)
1 - avocado (mashed)
Fresh herbs of choice
Directions:
On one slice of tomato, place grated zucchini and summer squash and thin slices of onion. Top with mashed avocado. Season to taste with fresh herbs of choice, dulse, etc. Place second slice of tomato on top, sandwich style. Garnish with ground flax seed. Eat with a knife and fork. Mmmmm Good! Enjoy!
