Raw Snowball Cookies

This raw dessert is not only a perfect addition to your collection of easy raw food recipes with 5 ingredients or less, but they also embody our inclusive philosophy of vegan for all. Made with simple and wholesome ingredients, these snowball cookies are a guilt-free indulgence that will satisfy your sweet tooth, vegan or not.

Ingredients:

2 cups Pecans (chopped)

1 ½ cups Dried Fruit (pear and/or apricot) (cut in small pieces)

1 ½ cups Coconut (shredded & unsweetened)

Raw Honey or Maple Syrup to taste

Directions:

Place 'S' blade in food processor and turn on the machine. Alternate adding the pecans, dried fruit, and sweetener, until well mixed, and forms a ball. Form mixture into small balls and set aside. In a separate shallow bowl, place dried coconut, and roll the balls in the coconut before placing them on a platter. (Yields about 25 Snowballs that will be enjoyed by all, even non-vegetarians.)
