Fudge on The Hallelujah Diet? You bet! In fact, this recipe is so delicious, it's reason enough to make your holiday guests want to try The Hallelujah Diet when they get home. Combining the rich, creamy texture of almond butter with the chocolatey taste of raw carob, this recipe is a much healthier (and tastier) option for people who love peanut butter cups. Sweetened only with dates, it's a sweet treat that can be enjoyed guilt-free, too. In fact, this recipe can even be made gluten-free; just replace the regular oats with gluten-free oats. Best of all, it's really simple — no cooking involved! All you need is a food processor and a refrigerator and you're ready to serve a delightful treat that your guests would never expect from a "health nut" like you!

From our recipe book Rhonda's Culinary Creations by Rhonda Malkmus.

1 cup rolled oats
3/4 cup raw carob powder
1/4 cup sunflower seeds, ground fine
1/2 cup raw almond nut butter
4 to 6 Medjool dates, pitted, soaked 4 hours, drained (save soaking water)
1/4 cup date soaking water
1/2 to 1 cup walnuts or pecans, chopped
1/4 cup sesame seeds, ground (optional)

1. Place all ingredients (except nuts) in a food processor with the S-blade in place and process until well blended.
2. With the machine running, slowly add just enough date soaking water until mixture forms a ball.
3. Remove from food processor and fold in nuts.
4. Press mixture into 8-inch square pan lined with lecithin or lightly oiled with coconut oil.
5. Chill, cut, and serve. Keep covered in refrigerator.
6. Options: You can replace the date soaking water with 1/4 cup maple syrup but the recipe then becomes a one-star recipe.
