Raw Fruit Pudding

This vegan recipe comes from Trudy Eriksen who writes, "This is one of my favorite plant powered recipes. This raw dessert is a delightful finale for any vegan healthy meal. With no sugar additives, just sweet fruit and rice milk, this pudding is bound to be a family favorite."

Ingredients

  • 1 cup strawberries (fresh or frozen)
  • 1 cup peaches (fresh or frozen)
  • 2-3 bananas
  • 1 cup rice milk
  • 2-4 tablespoons ground organic flax meal

Method

  1. Grind flaxseed into meal and set aside. Blend really well, strawberries, peaches and bananas. Add rice milk and flax- meal, and blend again. ENJOY! (Amount of ground flax-meal used will determine thickness of pudding.)
Whole-food meal with leafy greens, beans, grains, berries, avocado, seeds, and vegetables being prepared in a sunlit kitchen.
