No Cheese, Cheese Sauces

No Cheese, Cheese Sauces

Cheese made from cow's milk is enjoyed by many because they like the flavor of cheese. Unfortunately, cheese made from cow milk is one of the most dangerous things you can eat. Cheese made from cow's milk is high in saturated fat and salt, increasing risk of cardiovascular problems. But there are dairy-free cheese substitutes that are allowed on raw vegan diets for special occasions!

These substitutes are made from rice and almonds.

(We discourage the use of soy cheeses, as well as all other soy products because they are too high in protein and contain lots of estrogen.)

Simple Vegan Cheese Sauce

This one requires only three ingredients! Quick, easy, tastes good, and contains ingredients only from the bible food list.

Ingredients

1 cup Purple Label Vegenaise (found in most Health Food Stores)

1 rounded tablespoon Nutritional Yeast (found in most Health Food Stores)

Distilled water

Directions

Stir Vegenaise and Nutritional yeast together and then slowly add water until desired consistency is reached. Can be used on baked potatoes, steamed vegetables, rice dishes or anywhere else a cheese sauce is called for. "

Homemade Vegan Cheese Sauce

This recipe makes a nut-based sauce with more room to adjust the flavor with seasonings and spices. Either of these heart-healthier options are a better choice than sauce made with cheese from cow's milk. Enjoy!

Ingredients

1 cup raw cashews, soaked in water for at least 4 hours or overnight
1 cup vegetable broth
2 tablespoons nutritional yeast
1 tablespoon lemon juice
1 teaspoon Dijon mustard
1 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon smoked paprika
1/4 teaspoon cayenne pepper
Salt and pepper to taste
Water as needed to thin the sauce

Directions

1. Drain and rinse the soaked cashews.
2. In a blender, combine the cashews, vegetable broth, nutritional yeast, lemon juice, Dijon mustard, garlic powder, onion powder, smoked paprika, cayenne pepper, salt, and pepper.
3. Blend until smooth and creamy. If the sauce is too thick, add water a little at a time until it reaches your desired consistency.
4. Taste the sauce and adjust the seasoning as needed.
5. Heat the sauce in a small saucepan over medium heat until warm.
6. Serve the sauce over your favorite pasta, vegetables, or other dishes as desired.
