Whether it's the holidays or you're making vegan food for any occasion, today's vegan meal inspiration comes from Lisa Wagner who lives in Georgia. This is the perfect recipe too add to a holiday vegan meal. Lisa writes, "We just LOVE stuffing, so here is my FAVORITE HOLIDAY RECIPE:"
Directions:
2 tablespoons extra virgin olive oil
1 large onion (chopped)
2 celery ribs (chopped)
1 large carrot (chopped)
1 loaf (16 oz) crusty-type (whole grain) bread (dry & cut into 1/4 inch cubes)
2 1/4 cups vegetable broth
1/2 teaspoon rosemary
1/2 teaspoon thyme
1/2 teaspoon sage
Sea Salt to taste (optional)
Directions:
In a large saucepan, sauté vegetables in olive oil until tender. Add bread cubes to saucepan, along with vegetable broth, and toss to moisten. Stir in seasonings. Spoon into olive oil-sprayed 9x13 glass pan. Bake at 350 for 35 minutes covered, then uncovered for an additional 10 minutes." ENJOY!
