Kathy's Veggie “Spaghetti”

One of our favorite easy to cook vegan meals! This innovative recipe replaces traditional pasta noodles with nutrient-rich vegetables, such as zucchini and squash, for a low-carb and gluten-free alternative. Not only is it a great way to sneak in more veggies into your raw diet, but it's also a flavorful and satisfying vegan meal that will leave you feeling energized and satisfied.

Ingredients:

Various Veggies (asparagus, zucchini, yellow squash, green beans, mushrooms, green, yellow, or red peppers...) 

Organic Spaghetti Sauce or Marinara Sauce

Directions:

This recipe comes from Kathy K.: "When I get hungry for spaghetti, I slice up various veggies (some examples are asparagus, zucchini, yellow squash, green beans, mushrooms, green, yellow or red peppers…) and very lightly steam them. Then I take a jar of organic spaghetti sauce or marinara sauce from the health food store, heat it up, and pour it over the steamed veggies. Very satisfying!" ENJOY!
