This week's affordable vegan food recipe is from 2-year old Jamila's mom who wrote: "Rev. Malkmus; thank you for your work and inspiration! She writes, "I have to fight tooth and nail to ensure my children follow the Hallelujah food plan, as no one I know shares a like mind. I do not want my children's health to be compromised. I want them to have the best foundation in nutrition; because I know what they eat affects ALL areas of their lives. The following recipe is a great way I use to incorporate raw veggies into the diet of my 1-year old Gavril, and 2-year old Jamila."
Try this well balanced vegan meal for the whole family:
Ingredients
1 cup organic couscous
1 1/2 cups distilled water
Directions
Add to water herbs i.e. thyme, basil, oregano, pinch of cayenne, dash of cinnamon. Bring water to a boil and pour flavored water over couscous, stir, cover, let sit 5minutes, and do not re-heat.
Add to the couscous finely chopped vegetables. Be creative each time. The base I use is: 2 carrots, 1/4 sweet onion, broccoli (including soft stalk), tomato, freshly squeezed lime juice. Additions could include sweet red bell pepper, grapes, an apple, or raw finely chopped walnuts, cauliflower, spinach, celery, etc."
