Looking for a healthy and delicious addition to your holiday table? Try adding a Holiday Sweet Potato Souffle to your raw food menu! This souffle is vegan, gluten-free, and made with simple ingredients like sweet potatoes, almond/rice milk, and maple syrup/honey. It's a favorite low fat raw vegan recipes and is packed with nutrients, making it a guilt-free indulgence.

Ingredients

  • 3-4 medium Sweet Potatoes (peeled and cut into chunks)
  • 1 Orange (juiced)
  • 2-3 tablespoons Raw Unfiltered Honey (or to taste)
  • ¼ cup Almond Milk or Rice Milk
  • 2-3 tablespoons Pure Maple Syrup (or Honey)

Method

  1. Boil Sweet Potatoes until soft. Mash them and add Orange Juice, Honey, and Milk. Mix thoroughly and place in a liquid lecithin sprayed casserole dish. Drizzle Maple Syrup over the top and bake for about 30 minutes at 350 degrees or until heated through. (Optional: Sprinkle with chopped Pecans before serving.) ENJOY!
