Ingredients:
8 cups whole grain dried bread (or cornbread) cubes (available pre-packaged in most Health Food stores, or can be made at home)
1 ½ cups Onions (chopped)
2 Celery ribs (chopped)
1 cup Mushrooms (sliced) (optional)
1 teaspoon Sage
1 teaspoon Marjoram
1 teaspoon Thyme
1/2 teaspoon Celtic Sea Salt
1-pinch Cayenne (optional)
1 3/4 cups Vegetable Soup Stock
1 vegan low-sodium Bouillon cube
1/2 cup Water Chestnuts (sliced) (optional)
2 sweet Apples (peeled and cut into cubes)
1 cup Pecans
1 cup organic Raisins
Directions:
Place bread cubes in a large bowl and set aside. Steam over low heat (in very small amount of water) onions, celery, and mushrooms until onions are transparent. Then add sage, marjoram, thyme, Celtic sea salt and cayenne. Mix well and set aside. Place vegetable soup stock and bouillon cube in blender and process until bouillon cube is dissolved. Pour onto bread cubes, add steamed vegetables, and toss well until all bread cubes are moistened. (If more liquid is needed, add a little soup stock or distilled water.) Place in baking dish that has been coated with liquid lecithin (do not pack tightly), and bake at 350 degrees for 30 minutes. For a more moist dressing, cover the baking dish while in oven. ENJOY!
