An important note before we begin: avocados are a good fat, which is good for the body. Because fat takes more energy to digest, it is not recommended for those dealing with such challenges as cancer.
With tomatoes in season, and those of us who have a garden having an abundance of fresh, vine ripe tomatoes, here is a tasty, naturally vegan recipe:
3 vine ripe tomatoes (quartered and pureed)
1 vine ripe tomato (finely diced)
1 celery stalk (minced)
1 red bell pepper (minced)
2 avocadoes (mashed)
1 garlic clove (minced)
1 lime (juice from)
Celtic or Himalayan salt to taste
1 jalapeno (seeded and finely minced) OPTIONAL
Blend the 3 quartered tomatoes and place in glass bowl, and add finely diced tomato, minced celery, minced red bell pepper; mashed avocadoes, minced garlic, lime juice, salt, and minced jalapeno if desired. Stir all ingredients thoroughly and ENJOY
