When it comes to hearty and nutritious meals, few dishes compare to the vibrant and flavorful combination of eggplant, squash, and peppers in a delectable casserole. Eggplant, squash, and peppers are all low in calories but packed with essential nutrients. They are excellent sources of dietary fiber, vitamins (such as vitamin C and vitamin K), and minerals (including potassium and manganese).

Ingredients

  • 2 medium eggplants, peeled and chopped into bite-size pieces
  • 2 cups sliced fresh mushrooms
  • 1 zucchini, cubed
  • 1 yellow squash, cubed
  • 1 red onion, diced
  • 1 red pepper, diced
  • 1 jar marinara sauce (homemade or store bought)

Method

  1. Preheat oven to 375 degrees F.
  2. Place all ingredients into an appropriately sized casserole dish. Stir everything together so that all the vegetables are coated with the sauce.
  3. Bake for 30-45 minutes, depending on how you like the texture of the cooked squash and eggplant.
Whole-food meal with leafy greens, beans, grains, berries, avocado, seeds, and vegetables being prepared in a sunlit kitchen.
