  1. 3 cups chopped cauliflower
  2. 2 cups chopped celery
  3. 1 cup chopped carrots
  4. ½ cup pecans
  5. 1/8 tsp. paprika
  6. ¼ tsp. black pepper
  7. ½ tsp. dried oregano OR basil
  8. ½ tsp. granulated garlic
  9. ¼ tsp. unrefined salt
  10. 2 tbsp. extra virgin olive oil

Directions For Making Cauliflower Rice Medley

To make this dish, begin by placing all the ingredients into a food processor. Then you’ll want to chop the mixture into rice-sized pieces. After you’ve finished processing the ingredients in the food processor, pour the mixture into a large baking dish. Next, add 1 ½ cups of water (amounts can vary depending on cooking time). Then you simply bake the dish for approximately 40 minutes, and you have yourself a delicious cauliflower rice meal for any occasion!

Note: the longer you allow the mixture to cook, the softer it will become. For less softness, reduce the cooking time and the amount of water you’re using. If you want the vegetables to be softer, cook the mixture for about 10 more minutes or until it reaches your desired texture.

3 cups chopped cauliflower
2 cups chopped celery

Directions

2. After processing the ingredients in the food processor, pour mixture into a large baking dish.
3. Add 1 ½ cups water (Amounts can vary according to cooking times.)
4. Bake at 375 degrees for about 40 minutes or until done.
Note: The longer the mixture cooks, the softer it will become. For less softness, reduce the cooking time and amount of water used. For more softness of the vegetables, cook for 10 more minutes or until desired texture is achieved.
To change up the flavors, try other vegetables and different herbs and spices of your liking.
