Though we omit dessert at most Hallelujah Diet meals, there are sometimes special occasions that a healthy, raw dessert might be a nice conclusion to the meal – especially when having company or a vegan dinner party. The below recipe is taken from Rhonda's new "Hallelujah Holiday Recipes… From God's Garden."

Ingredients

3/4 cup almond butter

1/2 cup carob powder

3 Medjool dates (pitted, soaked 2-hours, and drained)

1/2 cup rolled oats

1 cup almonds OR walnuts OR pecans (chopped)

1/2 cup unsweetened grated coconut

Directions

Reserve 1/4 cup coconut. Combine remaining ingredients in a food processor, and with an S blade, mix well. Shape mixture into bite-size balls. Roll in reserved coconut. Store in refrigerator in plastic container with wax paper between layers. ENJOY

*ORGANIC INGREDIENTS ARE ALWAYS RECOMMENDED.

½ cup rolled oats
1 cup pecans OR almonds (chopped)
½ cup unsweetened coconut
Option: Omit coconut and use chopped nuts both in recipe and to roll crunchies to coat.
