A simple supper for any time of the year! This recipe from Jordan Collie Jane is one of our favorite raw vegetable recipes here at Hallelujah Diet. Jordan writes, "This is something my mom and I love to eat. We became vegetarians together not so long ago, and we discovered this lunch favorite of ours. We also found that we prefer the flavored wraps, such as tomato basil or spinach feta." These simple vegan meals for one are a great opportunity to let the kids try making their own - add as many different vegan veggies as you like. Be creative!
To serve one:
Ingredients:
1 wrap
Your favorite veggie cheese
Sliced Tomatoes
Sliced Cucumbers
Grated Carrot
Alfalfa Sprouts
Raw Corn cut off the Cob (adds a nice touch)
Salad Dressing
Feel free to add a few more favorite veggies if you like.
Directions:
Lay the wrap out and spread a thin layer of salad dressing over the surface. On one side, place the cheese, tomatoes and cucumbers. Sprinkle on the carrots, alfalfa sprouts and corn. Roll the wrap tightly, cut it diagonally in the center, and Enjoy!
