This SuperStar Veg-Smoothie is from the recipe book, Less Is Enough. Smoothies are very popular, but many times can be filled with excess sugar…even from natural sources, such as too much sweet fruit. The recipe book shows examples of increasing the vegetable portion and lowering the fruit portion. Some of the recipes, like this one, could even be called a blended salad. Training the palate to appreciate blended treasures with low to no sweet fruit is a journey worth exploring!

6 medium basil leaves
1 large handful arugula
1 large handful spring mix (mesculin)
1 large handful spinach
A golf ball size chunk of onion
¼ red bell pepper
1 clove garlic, peeled (optional)
½ Tbsp. extra virgin olive oil
1 tsp. raw ginger
1 Tbsp. lemon juice, or more to taste
¼ avocado, peel and seed removed
…› tsp. unrefined salt
A few sprinkles pepper
