On a cold winter evening, after Rhonda and I have had our BarleyMax and a large raw vegan salad, one of my favorites for the cooked portion of our evening meal is Seasoned Basmati Rice. It makes for the perfect winter vegan dinner. The aroma of Basmati Rice cooking will tantalize your taste buds. It's quick and simple to make; let's get started.
Ingredients
- 1 cup organic brown Basmati Rice (rinsed and set aside)
- 1 yellow Onion (chopped)
- 2 stalks Celery (chopped)
- 1 green Pepper (chopped)
- 3 cups Distilled Water
- Celtic Sea Salt and Herbs to taste
Method
- Sauté the celery, onion and pepper in a small amount of water or vegetable stock until onion is translucent. Add rice and sauté a few minutes more (but do not let it burn). Immediately add the water and bring to a quick boil. Cover, reduce heat and simmer for 30 minutes. Turn off burner and let sit covered for an additional 15 to 30 minutes. Add Celtic Sea Salt and herbs to taste. Serve alone, or use as a base on which to place stir-fried or steamed vegetables. ENJOY!
