This week's recipe comes from Denise McGhie, who lives in Georgia. It came in during the holidays, and though the holidays are over, I thought some of you might still like to have it on hand, as it can be served any time of the year as a RAW treat.
Denise writes: "Merry Christmas, Rev. Malkmus! I found this recipe in Family Fun catalog, December issue. It is a great recipe and EVERYONE liked it. . . . "
Ingredients:
1 cup raw almonds 3/4 cup raw pecans
3/4 cup raisins
3/4 cup dried apricots
3/4 cup dried chopped dates
1/4 cup fresh orange juice
Directions:
Pulse all ingredients in food processor or blender until you have a coarse meal. Add ¼ cup fresh orange juice and pulse until mixture sticks together. Shape into 1-inch balls and place in mini cupcake liners (or roll in shredded coconut). ENJOY!
