Summer is right around the corner, and nothing says summer like a fresh strawberry pie! But what about all the sugar? Don't worry... now you can have your pie and be healthy, too! This delectable pie filling uses bananas and dates for sweetness — no refined sugar needed! In Health Tip #218 we shared a RAW NUTTY/MAPLE PIE CRUST. Last week we gave you numerous fresh fruit fillings for that crust. With strawberry season coming soon, this week we will give you another filling for that pie crust, made from strawberries, dates, and bananas. I can vouch for it being raw delicious! The perfect finale for a fresh vegan menu.
Ingredients:
PIE SHELL
1 3/4 cups raw almonds, soaked overnight then drained
1 cup soft pitted dates
BINDER:
7 or 8 large ripe strawberries
5 soft pitted dates
2 fairly ripe bananas
1 tablespoon fresh lemon juice
Blend above ingredients in food processor or blender.
FRUIT FILLING
2 pints of fresh organic strawberries cut into quarters
Directions:
Use a food processor or blender to combine soaked almonds and soft dates until a dough is formed. Use fingers to press dough into the pie dish as a crust. Then, use a food processor to combine binder ingredients. Pour into crust. Top with fresh strawberries. Cover with plastic wrap and store in refrigerator. Be sure to chill thoroughly before serving.
