Raw Cranberry Sauce

The best cranberry sauce you will ever make!


2 cups fresh cranberries, ground*
1 orange (washed to remove any residues) chop very fine including at least ½ of the rind
2 ripe pears, peeled, and chopped fine
1 medium apple, peeled, and chopped fine
½ cup walnuts or pecans, chopped into pieces
4 celery ribs (stalks), chopped fine
½ cup organic raisins or dates (pit and chop dates, if using)
1 tsp cinnamon or pumpkin pie spice
¼ tsp ginger
¼ tsp allspice
½ cup raw, unfiltered honey or other sweetener**


1. Grind berries, chop fruit, mince nuts, chop celery and dates if using.
2. Place all ingredients in a bowl and mix well.
3. Cover and place in the refrigerator until ready to serve.
4. Serve on a bed of leaf lettuce.
5. Option: Leave cranberries whole and place in a saucepan with all remaining ingredients. Turn burner to low and simmer until thickened, stirring occasionally.
6. Option: Replace 1/2 cup honey or other sweetener with 1/2 cup soaked, pitted, and pureed dates.
