Another thing I love about this recipe is that you can adjust the seasonings to suit your own tastes. When I make mine, it’s smoky (chipotle and smoked paprika), a little spicy (poblanos and chipotle) and slightly sweet (honey and sweet corn). Then, I top it with some of my favorite non-dairy cheese shreds or a little bit of homemade cashew sour cream.The cool thing about adding cashew sour cream is that studies have shown eating cooked tomatoes with a small amount of fat actually helps our bodies absorb the super-beneficial lycopene in the tomatoes.
