Whipped Walnut Cream

From Rhonda Malkmus' new recipe book, "Rhonda's Culinary Creations" Yield: 2 cups Ingredients
  • 1-1/2 cups walnuts, pine nuts or macadamia nuts, soaked overnight and drained
  • 1/2 to 3/4 cup freshly squeezed orange juice, depending upon desired consistency
  • 2 Tbsp maple syrup or other natural sweetener
  • 1/4 tsp pure vanilla (optional)
Directions
  1. Place nuts in a container and fill with enough water to cover, cover with a cloth until ready to use and drain.
  2. Place drained nuts in a Vitamix or blender and combine with orange juice, maple syrup and almond extract.
  3. Blend well using a rubber spatula to scrape the sides often to make sure all ingredients are worked in.
  4. Turn off machine check consistency and taste for sweetness.
  5. Add a little distilled water if “cream” is too stiff.
  6. Use cream immediately.
  • Note: Substitute any raw nut of choice but walnuts are one of the healthiest nuts to consume.
