My evening meal usually begins with an 8 oz glass of either straight carrot juice or mixture of 50% carrot juice and 50% various other juices (celery, beet & beet top, cucumber, spinach, etc. – depending on what’s available) and made fresh. That is usually consumed between 5:00 and 5:30 p.m. Next comes my blended salad. In our Vitamix blender is tossed in all the ingredients that would go into a regular salad:
- small tomato or ¼ larger tomato in season
- 1” cut of cucumber, stalk of celery, small carrot cut in 1” sections
- ¼ to ½ avocado depending on size
- a big handful of spinach
- 1 Tbsp of a favorite salad dressing
